Abstract :

Being rich in nutritional value and food functionality, pre–germinated own rice has added advantage over polished milled rice or own rice considering physiological, clinical and nutritional aspects. A total of ten rice varieties of own rice including both traditional rice such as Ghungshe, Kajalsail, Monteshor, Moulata, Sadamota and high–yielding variety such as BR22, BR23, BRRI dhan31, BRRI dhan40, BRRI dhan41 were analyzed for the presence of important amino acids such as GABA, Glutamic acid, Methionine, Lysine, Histidine and Arginine. Our data revealed that BRRI dhan31 possess the most elevated content of GABA among ten rice varieties. Since GABA has nutritionally potential to mediate recovery to many disorders such as Diabetics, Hypertension, Alzheimer�s disease so dietary administration of BRRI dhan31 at pre–germinated own rice condition might be supportive to get a better healthy lifestyle.
