Development of Low Cost Multipurpose Instant Mix by Extrusion Process using Response Surface Methodology

Abstract :

The purpose of this study was to develop extrusion based multipurpose instant mix. A blend of rice, mungbean and groundnut was used in the study. The blend was extruded at different moisture content (12.6-19.4%), screw speed (349-601 rpm) and barrel temperature (116 -184°C). The regression models for SME, expansion ratio, bulk density, WAI and WSI were highly significant. Feed moisture and barrel temperature had significant effect on all the dependent variables although the effect of screw speed was observed to be the least. Numerical optimization was performed to obtain minimum density and maximum expansion and WAI. Range of predicted values of density, expansion and WAI were used for graphical optimization. Best extrusion conditions were 14 to 15.09% moisture 491 to 550 rpm screw speed and 155 to 175 o C temperature. A multipurpose instant mix was prepared by blending grain mix with milk powder and sugar. The product was compared with the similar products available in the market. It was similar in composition and was cheaper.
