ANALYSIS OF THE CUSTOMERS' PREFERENCES IN CHOOSING SUGAR FREE FOOD PRODUCTS IN 5 STAR HOTELS OF NEW DELHI

Abstract :

 With the evolution of creative chefs and easy availability of ingredients across the globe in the past decade, areas of special dietary foods take new dimensions in the hotel industry. These trends have evolved from opposing customer motivations: a desire to improve health and Wellness and a need to have expectations of food products met. Customer requirements has developed as a result of research into various health practices recommended for improved health, awareness and availability of sugar free food options along the globe. Branding has emerged from customer desire to have familiar products that consistently meet their expectations. The purpose of this study is (1) To examine the factors motivating the trends to look out for sugar free food recipes. (2) To determine the criteria various segments of hotel customers use for food selection and By developing a better understanding of the nature of the customer dining requirements of sugar free foods, foodservice administrators of the hotels will be positioned for more effective, proactive strategic planning.
